On Fermentation
Native with one punch down and one pump-over per day. Fermented in tank for four weeks at 70°F. Press sweet, then finish fermentation in oak for better wood integration.

On the Name
The name Squire is a nod to the nobility of Pinot, and an acknowledgement of the rural nature of the Central Coast.
