Le Clandestin • Cabernet Sauvignon, Sangiovese


Our daily work is with Syrah, and we are under contract to never produce a Syrah under Union Sacre — but in the heat of the harvest, sometimes the temptation is too much. In those moments, Le Clandestin is born.

VARIETAL: 70% Cabernet Sauvignon, 30% Sangiovese
VINEYARD: Santa Barbara Highlands, Pomar Junction
APPELLATION/AVA: Central Coast of California
TASTING NOTES: Cranberry, blackberry, cherry, blueberry, plum, violet, earthy
PRODUCTION (Cabernet Sauvignon): 100% destemmed. Grapes were cold soaked for 3 days. Fermented on skin for 20 days.
PRODUCTION (Sangiovese): 20% whole cluster. Grapes were cold soaked for 5 days. Fermented in tank for 2 weeks.
ELEVAGE: 40% French oak, 10 months
SANTA BARBARA HIGHLANDS VINEYARD: Showcases a broad spectrum of soils, from rocky sands to loamy clays. This is highlighted in the wines: Lighter textures ripen fruit faster, offering jammy fruit flavors, while heavy clays mature fruit more slowly and show more spice and earth characteristics.
