Aged 10 months in 100% new French Oak barrels. Racked only for bottling.
Fermented using native yeasts. Pressed at 4 brix into 7 new Cadus and Sylvan barrels to finish fermentation.
Black pepper, dark chocolate, blackberry, blueberry and cinnamon
100% destemmed, cold soaked for 4 days. Pumpovers twice daily, until pressed to barrel. Battonnage daily for 5 months.
